Gluten Free Waffles (Adopted from Every Last Crumb, by Brittany Angell)
Best results are had by weighing dry ingredients with a kitchen scale.
Makes about 4 waffles in Belgian Waffle maker.
240 grams Almond Flour
140 grams Tapioca Flour
4 tsp baking powder
½ tsp salt
4 tbls coconut palm sugar
Mix dry ingredients.
Then add and mix:
250 ml “milk” (coconut milk or milk substitute)
10 tbls “butter” (Melt or other oil)
2 tsp apple cider vinegar
To make egg free, OK to substitute with egg substitute such as Neat Egg.
Left overs can be refrigerated or frozen, then put in toaster to reheat.
